Let’s Get Started!
Directions:
To start making these tasty BBQ meatball onion bombs, preheat your grill to about 400-450 degrees. Don’t have a grill thermometer? Get your grill going and nice and hot, but you want to cook these for about 40-45 minutes without burning them up, so get a nice even heat you can cook low and slow with the lid on using indirect heat (not directly on flame or over coals).
Cut off the tops and bottoms of the onions and remove the exterior skin. Cut the onion in half and peel the layers apart, keeping the biggest layers to stuff with meat.
Setting the onion layers aside, mix the ground beef, diced onion, parsley, mushroom, brown sugar, condiments, and breadcrumbs in a large mixing bowl by hand.
Place a handful of the meatloaf mixture inside two of the onion layer pieces.
Wrap the onion meatballs in bacon, using three slices per ball. Secure the bacon with toothpicks to keep it from unraveling during cooking.
Grill low and slow for 40-45 minutes rolling once every 10 minutes or so. Grill using indirect heat and do not grill them directly over the coals or heat source or the bacon will get too crispy too fast.
We always use our #1 Rated Weber Performer Grill since it makes it so easy to grill indirectly and effectively each and every time we make these. You can bake these in the oven as well if you want to make sure you get a really even cook through, but grilling really brings out the flavor in these Bombs!
*Note: We just tested these using our Smoker and I have to say they are even better smoked! 225 degrees for 1 hour is all you need for perfection and the best Bacon Onion Bombs ever! We recommend using Hickory for the best flavor as well.
The result will be the perfect addition to your summer party — a bacon meatball onion bomb that is both sweet and savory!
Now all that’s left to do is enjoy!
Good luck!
What about in a smoker? Can u lay the ball on the grill or have to set it up higher?
Yes, you can definitely smoke these right on the grill plate. In fact we did this just 2 weeks ago and I think they come out better smoked. We used Apple Wood and a little Hickory.
Awesome. Thanks for the reply. U just follow the same directions for the smoker as the grill?
If you set your temp at around 275 on the smoker, you can smoke them for about 2 hours and they really come out nice.
The BBQ sauce… does it go on over the bacon at the end? I don’t see it mentioned in the directions.
Yes, that is the best way to do it.
I think I will make these in halves. The meat ‘ball’ idea is eye-appealing but making them in halves (as you would bacon-wrapped jalapenos) would allow for more servings. These look wonderful!
The biggest challenge is the onions and having enough bacon. Several times I have made these in bulk and it can really take a lot of both. I have made them big and small and when they are smaller you need to cut back on your cooking time just a little, so keep an eye on them. Good luck!
You are truly WHACKED to think Onion has in any way a relationship with Bacon…. GROSS.
Of course it does. There are literally thousands of recipes with onion and bacon together.
I can’t find the directions to this Onion Bomb
Got it
